Ginger and lemon tea with manuka honey

This homemade tea is soothing and tasty. It’s a lovely remedy for a sore throat and takes less than 5 minutes to prepare!

What you need:

1 to 1.5cm of ginger, peeled and sliced
A slice of lemon
1 teaspoon of manuka honey

How to prepare:

  1. Smash the ginger with the back of a knife. This releases the ginger flavour.
  2. Add the smashed ginger and one teaspoon of honey to a cup of hot water. Allow it to steep for 2 - 3 minutes.
  3. Add the lemon.

 

Flourless orange blossom cake

Want a dessert that’s a cut above the rest? This recipe by The Healthy Chef is awesome and easy to follow. The result: a delicious, moist cake that combines the beauty of oranges, honey and almonds.

What you need:

3 eggs
1 - 2 oranges (about 350g)

125g of manuka honey

1 teaspoon of vanilla extract

1 teaspoon of baking powder

200g of almond meal

How to prepare:

  1. Set your oven to 180 degrees Celsius.
  2. Boil or steam the oranges for 1 hour. Do not peel them! Put them in whole and leave them in the pot until they are soft. Once done, drain the oranges and let them cool.
  3. Chop the oranges and blend them in food processor until the mixture is smooth.
  4. Add in the manuka honey, eggs and vanilla extract. Mix again in the food processor until the ingredients are all combined.
  5. Add the almond meal and baking powder, and blend again.
  6. Use baking paper and line a 20cm baking tin.
  7. Add the cake batter into the tin.
  8. Bake the mixture for 40 to 45 minutes or until golden and cooked through.
  9. Once the cake is cooked, remove it from the oven and allow it to cool for 1 hour.
  10. Once the cake is cooled, remove it from the tin.
  11. Top the cake with caramelised oranges or other toppings as desired.

 

Manuka honeycomb

For a decadent snack, try this recipe for honeycomb using manuka honey!

What you need:

1 cup of caster sugar

2 teaspoons of manuka honey

2 teaspoons of baking soda

½ cup of water

¼ cup of glucose syrup

How to prepare:

  1. Put a pan on medium heat and add in the sugar, manuka honey, water and glucose syrup. Do not stir the mixture!
  2. Let the mixture heat and bubble, until it melts and turns into a dark caramelised colour.
  3. Remove the pan from the heat and add in the baking soda. Use a whisk to mix and allow the mixture to foam up.
  4. Add the mixture to a lined baking pan and allow it to cool for about 1 hour.
  5. Once it’s set, break it up into smaller pieces and it’s ready to eat!
